More On Papa Ray's

Papa Ray's Pizza & Wings: Seven months after opening their first Papa Ray’s restaurant at 2551 W. Fullerton Ave. in Logan Square, the owners are expanding into Uptown. The second Papa Ray’s location will open Oct. 25 at 4757 N. Sheridan Road. “We have really blown up in Logan Square,” says George Rayyan, 22, who owns Papa Ray’s with his brother, John, 27. “Things have really been good for us.” The Rayyans, who grew up in Niles, come from a family of restaurateurs; their uncles run Deer Franks in Deerfield and Upper Crust Bagel in Northbrook. Papa Ray’s most popular item is the 12-inch “monster slice,” which the brothers developed during three months of pizza testing. “I gained about 60 pounds,” George Rayyan says. They chose the Sheridan Road spot as their second location because of all the high-rise condo and apartment buildings nearby — a high concentration of residents likely to order pizzas for delivery, Mr. Rayyan explains. The brothers hope to open three more Papa Ray’s restaurants in 2011 — in Lincoln Park, Hyde Park and another neighborhood yet to be determined.
